Fresh horseradish makes a fabulous sauce/dressing.
Blend or pound in a pestle and mortar with a bit of salt (for grinding).
Then mix throughly with organic soya mayonnaise or sour cream (or your favourite mayonnaise) and a bit of lemon juice (or vingear if you insist).
Use on cold rare roast beef sandwiches or serve as part of a roast dinner.
It's much hotter and fresher than anything you can buy.
