Ham Biscuits and Eggs

Aside of making sandwiches for everybody's lunch, this is one of my favorite things to do with leftover ham:
Make your favorite biscuits adding:
1/2 to 1 tsp of dry mustard
1/2 to 1 cup of good, assertive cheddar cheese
1 cup or so of diced ham
Bake biscuits as usual.
While they're in the oven, fry up some eggs.
When the biscuits come out, split and fill with the eggs.
If I don't have ham, I use sausage. It's good!
