IDEAS FOR USING LEFTOVER HAM

- Cut 'steaks' to broil later
- Cut it into smaller sections to be used for:
- Boiled dinner (with potatoes, carrots, cabbage, onions)
- Slices for sandwiches
- Diced for omelets, quiches
- Diced for fried rice
- Diced/sliced for stir fry
- Dliced for fried ham & eggs

- I put leftover ham in a quiche. A quiche is also a good way to use up random leftover vegetables.
- I also made some ham and apple crepes recently with some ham.

- In pasta sauces (carbonara style or with mushrooms and cream or with peppers and tomatoes)

- Chicken and ham pie

- I put ham, diced very small, into deviled eggs.

- Make a meal out of a salad by adding ham, boiled eggs and cheese. I do that with a salad of lettuce tomato and cucumber. You can add other meats too.

- Strata (Think along the lines of a savory bread pudding)
- Slice it really thin and layer it with gouda or provolone cheese over baked chicken breasts

- Bake some spuds. When cooked, cut into halves, scoop out middle, add grated cheese and onion, add diced ham. Mix well and put back in skins. Bake for a while till ready.
- Dice ham, mix with cheese and onion, put into sliced pitas and grill

- I used some leftover ham in a chowder. It was a nice compliment to the clams and potatoes.

- Immediately after dinner, I slice the prettiest parts of the ham, stack them in 4s, put them in plastic bags and freeze. Then I cube the gnarliest pieces, separate into 2 cup servings, put them in plastic bags and freeze. Anything less than two cups, I put in 1/2 cup servings in plastic bags and freeze.

- Slivered ham and lightly saut ed sliced mushrooms in a b chamel sauce over slices of cornbread. Lots of sauce, needless to say.

- Jambalya- Brown rice, ham, Andouille, shrimp, and as much Cajun pepper and seasoning as you care for.
