If you can't find rolled wheat or rolled barley, substitute rolled oats. If rye berries are not available, substitute wheat berries.
8 cups water
1 teaspoon salt
3/4 cup rolled oats
3/4 cup rolled wheat
3/4 cup rolled barley or barley flakes
1 cup cooked whole grain rye berries
1 cup cooked wheat berries
1/3 cup cooked wild rice
1/4 cup raisins
1/4 cup chopped dates
2 ounces chopped toasted pecans
2 tablespoons butter
Bring water and salt to a boil. Stir in rolled oats, rolled wheat and rolled barley and return to a boil. Reduce heat and cook for 8 to 10 minutes. Stir cooked rye berries, wheat berries, wild rice and raisins, dates, pecans and butter into rolled-oats mixture. Cover, cook 2 additional minutes and drain if necessary. Serve with seasonal fruit and season to taste. Cooked cereal may be covered and refrigerated up to 2 days.
Nut Tree style note:
For added color, the top of individual cereal servings can be striped with colorful rows of sliced fresh strawberries, kiwis, bananas or other fresh fruit. Serve with milk, cream or, for a special treat, vanilla ice cream.
