HAM LOAF SUPERB
1 pound ground ham
1/2 pound ground beef
1/2 pound ground lean pork
2 eggs, beaten
1 cup quick-cooking oats, uncooked
3/4 cup tomato juice
1/3 cup finely chopped onion
1 teaspoon salt
1/4 teaspoon pepper
4 square slices mozzarella, American or Swiss cheese, cut diagonally into triangles
Mix all ingredients except cheese thoroughly. In ungreased baking pan, 13x9x2 inches, shape mixture into loaf, 9x5x3 inches.
Bake in 350 degree F oven until brown, 1 to 1 1/4 hours. Remove from oven; let stand a few minutes, then transfer ham loaf to ovenproof platter.
Make slits about 1/3 of the way through loaf at 1-inch intervals and insert a cheese triangle long side down in each. Place loaf in oven until cheese is slightly melted, 2 to 3 minutes.
Makes 6 servings
