MINI LUNCH MEAT POCKETS
FOR THE BISCUIT DOUGH:
1 3/4 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 cup butter, softened
1/2 cup Hidden Valley Original Ranch dressing
1/4 cup milk
FOR THE FILLING:
1 cup chopped turkey, ham, salami, chicken or roast beef
1/2 cup shredded cheese
3 tablespoons Hidden Valley Original Ranch dressing
Preheat oven to 350 degrees F. Line muffin tin with paper liners.
TO PREPARE THE BISCUIT DOUGH:
Whisk flour, salt, baking powder and baking soda in a bowl. Blend in butter until mixture resembles coarse meal. Stir in Ranch and milk.
Drop a heaping tablespoon of biscuit mixture into each muffin cup, filling only halfway. Press the biscuit mixture flat. Reserve extra mixture.
TO PREPARE THE SANDWICH FILLING:
Combine meat, cheese and Ranch.
Spoon filling over biscuit mixture; top with a spoonful of remaining biscuit mixture.
Bake 25 minutes.
