I have been making ham salad for years. We just love it.
It's any lean ham, eighter from a deli,or can ham or your own left overs. I don't have exact measurements because I don't know how much ham I will have on hand but here goes:
to About 2 lbs of ham diced real fine (maybe about the size of peas?)
Add 1 small finely diced onion, less if you want.
Add 2-3 ribs finely diced celery.
Pickle relish to taste, I add about 3-4 T.
Then add enough mayo or some people do Miracle whip. I generally use mayo, but have used both.
Stir this all together. It's really a simple recipe. Remember go by your taste buds.
