Recipe: Hearty Chicken Soup (with Italian sausage, lentils, barley, and garbazo beans)

1/2 Italian sausage (turkey is okay too), removed from casings and crumbled
1 tsp. olive oil
4 cups chicken broth
1/2 chicken breast (on bone, no skin)
1 cup lentils
1/2 cup barley
1 container of your favorite fresh salsa
1 can garbanzo beans (or your favorite bean)
1 pound fresh spinach, washed very well and stemmed
In a soup pot, brown sausage in oil, discard fat.
Add chicken broth, chicken breast, lentils, and barley cook for 45 minutes or until chicken is done.
Remove chicken, shred when cooled enough to handle, and return to pot with salsa and garbanzo beans, cook for 30 minutes more.
Add spinach, stirring, and serve when spinach is wilted enough.
You don't need salt or pepper generally, and it's really tasty and hearty.
