HIDDEN TREASURE MEAT LOAF
"Little squares of cheese melt within this juicy loaf with tomato topping. Cut into squares instead of slices for easy serving and an attractive appearance."
2 cups soft bread crumbs
1 cup milk
2 teaspoons Worcestershire sauce
2 teaspoons salt
Dash of pepper
2 eggs, slightly beaten
2 pounds ground beef
1/4 cup finely minced onion
1/2 pound sharp American cheese, cut in small cubes
Catsup (for topping)
sprigs of parsley or stuffed olive slices (optional garnishes)
Pour milk over crumbs; add Worcestershire sauce, salt, pepper and eggs and beat until smooth and creamy. Add beef and onion, mix only until blended.
Place half the mixture in a buttered 8-inch square baking dish. Press cheese cubes lightly into the mixture, then cover with remaining meat and smooth the top. Cover with a thin layer of catsup.
Bake in a 350 degree F oven about 45 to 50 minutes. Cut into 9 squares, garnish each with a sprig of parsley or slice of stuffed olive.
Makes 9 servings
