Recipe: Holiday Fruit Cookies, Irish Cream Cookies
Misc. I have 2 favorites and they are both very easy...
Holiday Fruit Cookies
(I always double these because we love them so much)
1 7-ounce can sweetened condensed milk
2 cups chopped walnuts
2 cups chopped dates
2 cups shredded coconut
2 teaspoons vanilla extract
Preheat the oven to 350 F.
Combine the condensed milk, walnuts, dates, coconut, and vanilla in a bowl; mix well. Roll the mixture into small balls. Place on a greased cookie sheet. Bake for 10 minutes or until light brown. Remove the cookies to a wire rack to cool.
Irish Cream Cookies
(I double this)
1/2 cup unsalted butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
1 tsp. Vanilla extract
1/4 cup bailey's Irish Cream
2 1/4 cups flour
1/2 tsp. Salt
3/4 cup chopped pecans
1 cup semisweet chocolate chips
Preheat the oven to 375-degrees.
Cream the butter, sugar, and brown sugar in a bowl until light and fluffy. Add the egg and vanilla; add the Irish cream; mix well.
Beat a mixture of the flour, baking soda, and salt into the creamed mixture. Fold in the pecans and chocolate chips
Drop by teaspoonfuls onto an ungreased cookie sheet. Bake for 8 to 10 minutes or until light brown. Remove to a wire rack to cool.
