Recipe: Special Coffee Cake (using sour cream, 3 recipes)

SPECIAL COFFEE CAKE

1 1/2 cups granulated sugar, divided use
1 tbsp. unsweetened cocoa powder
1 tsp. ground cinnamon
1/2 cup chopped walnuts
3 cups sifted all-purpose flour
3 tsp. baking powder
1 tsp. baking soda
1/2 cup butter or margarine, softened
3 eggs
1 1/4 cups sour cream

Heat oven to 375 degrees. Grease and flour a tube pan.

TO PREPARE THE FILLING:
In small bowl combine 1/2 cup sugar, cocoa powder, cinnamon and walnuts. Set this aside.

TO PREPARE THE BATTER:
Combine flour, baking powder and baking soda; set aside.

In an electric mixer at medium speed cream butter and remaining 1 cup sugar, beating well. Add eggs one at a time, beating between each egg. Blend in flour mixture alternately with the sour cream.

Pour batter (about 1/3) into the prepared pan, then add 1/3 of the filling. Do this alternately until the balance of the batter is on top.

Bake at 375 degrees for 1 hour or until done. Cool for 10 minutes. Take out of pan and continue cooling on wire rack.

SPECIAL COFFEE CAKE 2

1 1/2 cups granulated sugar, divided use
1 tsp. ground cinnamon
1 tbsp. unsweetened cocoa powder
1/2 cup chopped walnuts
3 cups all purpose flour
1 tsp. baking soda
3 tsp. baking powder
1/2 cup butter or margarine, softened
3 eggs
1 1/4 cups sour cream
1 (15 oz.) can blueberries, drained (optional)

Heat oven to 375 degrees. Grease and flour a tube pan.

TO MAKE THE FILLING:
In small bowl combine 1/2 cup sugar, cinnamon, cocoa powder and walnuts; set aside.

TO MAKE THE BATTER:
Sift flour with baking soda and baking powder; set aside.

In large bowl, with mixer at medium speed (or with wooden spoon) cream butter until light, gradually add the remaining 1 cup sugar, beating well. Add eggs, one at a time, beating well after adding each. Blend in flour mixture alternately with sour cream. Fold in blueberries, if using.

Turn half of batter into prepared tube pan, top with filling, spread remaining batter over filling.

Bake 1 hour or until done. Cool 10 minutes in pan, then turn out and finish cooling on wire rack.

SPECIAL COFFEE CAKE (13x9-inch)

1 cup sugar
1 cup packed brown sugar
2 cups flour
1/2 tsp. ground cinnamon
1/2 tsp. salt
1/2 cup butter, softened
1 cup buttermilk
1 egg, beaten
1 teaspoon baking soda

Preheat oven to 325 degrees F. Grease a 13x9-inch baking pan.

Mix together sugars, flour, cinnamon and salt; with a fork, cut in butter like for a pie crust. Reserve 1 cup of this mixture to use for the topping.

To remaining mixture, add buttermilk, egg and baking soda; mix well. Pour into prepared pan. Sprinkle with reserved topping mixture.

Bake at 325 degrees F for 45 minutes. This is perfect to make the night before.
