This is for Julie who lives in Francisco, Indiana. "Help with yeast rolls". I adapted this recipe from a regular recipe to a breadmachine recipe. It is absolutely delicious and works every time. I have been ask so many times for the recipe.
HOMEMADE BREADMACHINE ROLLS
(for 2 lb breadmachine)
IN A SMALL BOWL OR CUP PUT:
1/4 cup white sugar
1 cup very warm (105-115 degrees f) water
1 envelope yeast (or 1 tbsp.)
Stir and set aside for 5 minutes.
IN THE BREAD MACHINE PUT:
1/4 cup white sugar (may cut this down if too sweet for you)
1/2 cup vegetable oil (I use canola)
3 eggs, slightly beaten (room temperature)
3/4 tsp. salt
5 cups flour (watch your machine--it should come to a nice smooth ball-if not add a tablespoon water or to tighten it up a Tablespoon flour or more.)
Make a well in the center of the flour and pour the yeast mixture into it. Set your machine on dough setting.
TO SHAPE THE DOUGH:
At the end of the process, take out to a slightly floured board. Punch down completely to remove all air. From here make into butter horns, clovers, or biscuit type rolls. This can even be made into loaves of bread.
For Cloverleaf Rolls:
Cut off a piece the size of a walnut and tuck under sides, then pinch all on the bottom. Place 3 of these in a greased muffin pan cup.
For Butter Horns:
Roll out like pie dough the cut in pie shape wedges and roll from big end to small.
For Biscuit Type:
Roll out about 1 inch thick and cut with biscuit cutter.
After your rolls are shaped and ready to rise, turn on your oven for 10 minutes at 200 degrees F. TURN OFF THE OVEN. Put your rolls in the oven it should take about 1/2 hour for them to double in size.
WHEN READY TO BAKE:
When risen, remove rolls from oven and preheat oven to 350 degrees F.
Bake at 350 degrees for 20-30 minutes. (The first time you make these watch after 20 minutes to see the time--all oven vary in temperature)
Eat and enjoy.
