Recipe: Homemade Watermelon Syrup (blender or food processor)

HOMEMADE WATERMELON SYRUP

"Serve this delicious topping over vanilla ice cream or angel food cake. Mix into sparkling water for a watermelon soda. It's terrific for watermelon martinis or other cocktails."

4 cups pureed, seedless watermelon
1 cup granulated sugar

Place pureed watermelon and sugar in a saucepan over medium heat and stir while bringing to a simmer.

Adjust heat to maintain simmer. Stirring occasionally, simmer until mixture has reduced by half and becomes syrupy.

Remove from heat to cool, and place in a glass bowl or jar. Cover and refrigerate until needed. Keeps five days in refrigerator.

Makes 2 cups
