Recipe: Honey Mustard Chicken, Honey Mustard Dressing (3) and Honey Mustard Chicken Sandwiches

HONEY MUSTARD CHICKEN

1 tablespoon olive oil
1/3 cup Dijon mustard
3 tablespoons honey
1/2 teaspoon curry powder
1/2 teaspoon dried tarragon
8 boneless, skinless chicken breasts

Blend all ingredients together, except the chicken.

Arrange chicken in a 11x7x2-inch baking dish coated with nonstick spray. Pour sauce over chicken.

Bake at 350 degrees F for 35 minutes or until chicken is done.

HONEY-MUSTARD DRESSING

Makes 1 cup

1/2 cup olive oil
2 Tbsp. Dijon mustard
4 Tbsp. raspberry or red wine vinegar
2 Tbsp. honey
1/4 tsp. salt
1/4 tsp. ground black pepper
1/4 tsp. ground nutmeg

Combine all ingredients in a jar; cover tightly, and shake vigorously.

HONEY-MUSTARD DRESSING 2

Makes 1 1/2 cups

3/4 cup plain nonfat yogurt
1/4 cup reduced-calorie mayonnaise
1/4 cup honey
2 tablespoons Dijon mustard
2 tablespoons coarse-grained mustard
1 tablespoon rice vinegar

Combine all ingredients in a small bowl; cover and chill thoroughly.

HONEY MUSTARD DRESSING

1/4 cup honey
1/4 cup Dijon mustard
1/4 cup red wine vinegar
1/2 lemon, juiced
1/2 tsp fresh ground black pepper
1/2 tsp Worcestershire sauce
1 clove garlic, minced
3/4 cup olive oil

Mix honey and mustard in a lidded jar. Add remaining ingredients and shake vigorously.

HONEY-MUSTARD CHICKEN SANDWICHES
Makes 4 servings

1/3 cup honey
1 tablespoon sliced green onions
1/2 teaspoon dried tarragon
3 tablespoons Dijon mustard
4 boned and skinned chicken breast halves
4 lettuce leaves
4 slices tomato
1 avocado, pitted, cut into slices
4 Kaiser rolls, split

Heat grill.

In small saucepan, combine honey, onion, tarragon and mustard; blend well. Bring to a boil. Reduce heat to low; simmer about 5 minutes or until slightly thickened.

When ready to grill, place chicken on gas grill over medium heat or on charcoal grill 4 to 6-inches from medium-hot coals.* Cook 15-18 minutes or until chicken is fork-tender and juices run clear, turning once and brushing occasionally with mustard mixture.

Layer lettuce, chicken, tomatoes and avocado slices in each roll.

*To broil, place food on broiler pan and broil 4-6-inches from heat using times as above as a guide.
