Recipe: Cilantro Rice

CILANTRO RICE

1 tablespoon unsalted butter or olive oil
1 carrot, peeled, diced fine
1/2 cup finely-chopped scallions, including some green tops
2 cups white long-grain rice, uncooked
1/2 teaspoon salt
1/2 cup minced fresh cilantro
4 1/2 cups water

In a large, heavy saucepan, melt the butter or heat the olive oil over medium heat and saute the carrot and scallions until the scallions soften, about 3 to 4 minutes.

Add the rice, salt, cilantro, and water. Stir and bring to a boil. Reduce the heat to low, cover, and cook the rice until tender, about 15 minutes. If the rice appears dry, add a touch more water. Let the rice stand uncovered for 3 to 5 minutes before serving.

Makes 6 to 8 cups
