Recipe(tried): Hot Bag Chicken with Summer Squash (Chicken and Zucchini in Foil)
Main Dishes - Chicken, PoultryThis recipe I have made many times on the grill but would also work over an open fire. Everyone loves this recipe and you can stretch it out by adding more squash. I usually always add lots more squash as you can see from my notes. I also just slice up a whole red onion.

Hot Bag Chicken with Summer Squash
Serves 4
1 Reynolds Hot Bags Foil Bag, large size
4 slices (1/4-inch) red onion
2 small zucchini or yellow squash (approx 1lb), cut crosswise in 1/2-inch pieces--I usually do 2 each of the zucchini and yellow squash, it helps to stretch the servings.
4 Roma tomatoes, cut crosswise in 1/2-inch pieces
4 boneless, skinless chicken breast halves cut into cubes or you don't have to(approx 1-1/3 lb total)
1/2 cup Wegmans Italian Garlic Vinaigrette Salad Dressing (Produce Dept) or any Italian dressing
Preheat grill on MEDIUM-HIGH.
Place onions side-by-side on bottom of foil bag. Top with squash, tomatoes and chicken. Drizzle with vinaigrette.
Double-fold open end of bag; place on grill rack.
Grill, covered, 20 - 25 min. Cut open top of foil bag. Carefully fold back foil, allowing steam to escape (chicken should reach internal temperature of 165 degrees).
For open fire just put foil bag on rack over fire and then cover with a large aluminum foil roasting pan -- you can then serve the meal in the roasting pan.
