Recipe: Hot Cabbage Slaw

I think the cabbage dish you are referring to is probably Pennsyvania Dutch in Origin. I looked in a couple of old recipe books and came up with this recipe which I thought was interesting. Back then, it was pretty common to use bacon drippings instead of butter or margarine in a lot of recipes. I will look in a couple more old books and if I find anything I will post it.

Hot Cabbage Slaw

2 quart covered saucepan...Cooking time~10 minutes

3 tablespoons butter or margarine
1/4 cup onion, finely grated
1 medium-sized head of cabbage, shredded fine
1 tablespoon water
1 teaspoon salt

Dressing (recipe below)

Place butter and onion in saucepan. cook on high heat until butter is melted. Add cabbage, water and salt, cover. Let come to full steam. Remove cover, blend dressing through cabbage, using a fork. Cover, cook 1 minute longer. Serve at once. Serves 4.

Dressing
1 egg
1/2 cup sour cream
4 tablespoons vinegar

Beat egg slightly. Add sour cream, vinegar, beating thoroughly. Use fork to toss dressing through cabbage.
