Recipe: Cacciatore Sauce (for chicken or pasta, using mushrooms, peppers and onion)

CACCIATORE SAUCE

"Reduce the sodium in this thick and tasty sauce by using reduced sodium tomato products and broth."

3/4 cup diced onion
1/3 cup diced green bell pepper
6 ounces sliced mushrooms
1/3 cup water
2 tablespoons tomato paste
1 (14 1/2 ounce) can diced tomatoes
3 cups chicken broth
1 bay leaf
1 tablespoon Tone's Garlic & Herb Seasoning
1/4 teaspoon ground black pepper
1 tablespoon Worcestershire sauce
1 tablespoon lemon juice
1 tablespoon sugar
2 teaspoons parsley flakes
Hot cooked chicken or pasta (for serving)

Cook onions, green pepper, mushrooms and water over low heat in a covered pan until vegetables are tender. Set aside.

Combine tomato paste, tomatoes, chicken broth, bay leaf, garlic & herb seasoning, black pepper, Worcestershire sauce, lemon juice and sugar in a stockpot. Bring to a boil. Add reserved vegetables and simmer for 30 minutes or until thickened.

Serve over chicken or pasta. Garnish with parsley flakes.

Makes 1 quart
