Recipe(tried): Palmetto Cake

It is interesting to see the different recipes for Palmetto cake. My mother made this cake every year at Christmas, for as long as I can remember. We are from south Central PA, just north of Hagerstown, MD.

PALMETTO CAKE

1 lb powdered sugar
5 eggs, beaten
1/2 lb butter
2 tsp. baking powder
3 1/2 c flour
2 tsp coconut juice
1 small coconut, peeled and grated
1 lb white raisins
4 oz citron
4 oz candied cherries
4 oz candied pineapple
1 c chopped almonds

Cream butter and sugar, then add eggs and coconut juice. Stir baking powder into flour (save 1/4 cup for the fruit), and then add to creamed mixture. Flour fruit, and stir in along with remaining ingredients. Bake at 275 degrees for 3 hours or until done.

My mother would place the pan low in oven.
