I also have left over pancake batter that I usually threw out until I found a posting somewhere on the web about freezing left over pancakes.
Prepare all the batter you mixed into pancakes. Place the pancakes in a single layer on a cookie sheet. Place cookie sheet in freezer for about 15-20 mins (The pancakes should be hard and cold). Finally, remove the pancakes from the cookie sheet and place them in a freezer bag. They will not stick to one another because you froze them first.
My daughter loves the silver dollar size pancakes and it only takes about 30 seconds in the microwave to heat and eat.
