The only safe recipe for canning zucchini is for relish or pickles. Plain zucchini becomes too thick and the heat cannot penetrate it enough to make it safe.
The only way to preserve it for bread is to grate and freeze or dehydrate. To freeze, just grate and put into ziploc bags and freeze.
The other ingredients for zucchini bread would not be able to be canned.
