My understanding is that once a pineapple is picked it will not ripen any further. This is what I was told when visiting the large pineapple plantation on Lanai in Hawaii. I believe your pineapple started fermenting.
To select a properly ripened pineapple, just smell it. It should have a pineapple-y smell. It doesn't matter if the outside is green. That old thing about pulling one of the stalks out of the center is also an old wives' tale (according to the pineapple plantation tour guide). Don't buy one that is very soft either. After you purchase a few you'll have it down pat.
I don't know what you can get in Australia but here in California we get plant-ripened pineapple that is guaranteed to be sweet. They are very expensive; sometimes as much as $7 or $8 U.S. each. I love pineapple. Good luck!
