Recipe(tried): Hummingbird Cake

You're right--it's delicious!

HUMMINGBIRD CAKE

1 c. flour
1/4 tsp. baking soda
1/2 c. sugar
1/4 tsp. cinnamon
1 egg
1/4 c. oil
1/2 tsp. vanilla
1/4 c. crushed, undrained pineapple
1/3 c. chopped pecans
1/2 c. mashed banana

Combine in a large bowl the flour, baking soda, sugar and cinnamon. Add egg and oil, stirring until dry ingredients are moistened, do not beat. Stir in vanila, pineapple, pecans and banana. Pour into two 9-inch greased and floured pans. Bake at 350 degrees for 25 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes before removing from pan. Frost with your favorite cream cheese frosting.

I usually double this and bake in a sheet pan.
