Recipe(tried): I freeze muffin batter all the time..

FREEZE AHEAD MUFFIN BATTER

I make the muffin batter, put into paper muffin cups in muffin pans; freeze and then put the muffins in an air tight plastic bag.

I don't even thaw them before I bake them. Just pop whatever amount of muffins you want in the oven in a muffin pan and bake for about 30-35 minutes at 400 dgrees F.
