Recipe(tried): Bran Muffins (using Kellogg's All Bran + substitute for Nabisco 100% Bran Cereal)
Breads - Muffins, Quick BreadsThe recipe below has been around a long time. However, Nabisco 100% Bran Cereal is no longer available. We tried the recipe using Hodgson Mill Oat Bran hot cereal as a substitute. The result tasted very good and just like the original. However, the texture seems a bit less chewy than we remember. Two batches still disappeared from our kitchen in one weekend.
BRAN MUFFINS
2 cups Hodgson Mill Oat Bran hot cereal (substitute for Nabisco 100% Bran)
2 cups boiling water
4 cups Kellogg's All Bran cereal
1 quart buttermilk (we usually use whole milk and get a good result)
3 cups sugar
1 cup oil
4 eggs
5 tsp baking soda
1 tsp salt
5 cups flour
Pour 2 cups boiling water over oat bran and buttermilk over All Bran and let sit for 20 minutes.
Mix sugar, oil, eggs, baking soda and salt together until creamy then mix together with cereals. Add flour last. Place in greased or paper-lined muffin cups.
Bake in 400 degree F oven for 15 minutes.
Can refrigerate the batter for up to one week.
