instance because the Papaya shake is renown in Cuba. In Puerto Rico we use the Papayas mostly in Dulce de Papaya, that is prepared with the sliced green papaya, slowly cooked with sugar and cinnamon. Fruit shakes are now in fashion in Puerto Rico, mainly the ripe banana, coconut, strawberries, pinneaple and other fruits, including the papaya. If you are planning on using papaya, it must be ripe, peeled and cubed. You add sugar (about 1 cup), a tsp of vanilla, 1 cup of evaporated milk and crushed ice. Then you process the shake in an Osterizer and serve it. The same recipe can be used for other fruits. You can add rum to these shakes, like in the Pi~na colada. My favorite is the banana shake or the pinneaple shake.
