GARDEN HERB BREAD
"The fragrance of turkey stuffing will fill your home while this flavorful bread is baking, thanks to all those aromatic dried herbs. This loaf is excellent for any cold meat sandwich you can dream up - including turkey and cranberry - and it makes downright tasty croutons."
FOR A REGULAR LOAF (1 lb.):
(Pan capacity less than 12 cups)*
3/4 cup water
1 tbsp. butter
2 cups white bread flour
1 tbsp. dry milk
1 tbsp. sugar
1 tsp. salt
1 tsp. chives
1 tsp. marjoram
1 tsp. thyme
1/2 tsp. basil
1 tsp. fast rise yeast or 2 tsp. active dry yeast
FOR A LARGE LOAF (1 1/2 lb.):
(Pan capacity 12 to 16 cups)*
1 1/4 cups water
2 tbsp. butter
3 cups white bread flour
2 tbsp. dry milk
2 tbsp. sugar
1 1/2 tsp. salt
2 tsp. chives
2 tsp. marjoram
2 tsp. thyme
1 tsp. basil
1 1/2 tsp. fast rise yeast or 2 tsp. active dry yeast
FOR AN EXTRA LARGE LOAF (2 lb.):
(Pan capacity more than 16 cups)*
1 1/2 cup water
2 tbsp. butter
4 cups white bread flour
2 tbsp. dry milk
2 tbsp. sugar
2 tsp. salt
1 tbsp. chives
1 tbsp. marjoram
1 tbsp. thyme
1 tsp. basil
1 1/2 tsp. fast rise yeast or 2 tsp. active dry yeast
Use dried herbs that are flaked and not ground. If using fresh herbs, double the amount. Any combination of spices may be substituted, according to your tastes.
This recipe can be made with the white, rapid, or delay bake cycles.
*With a liquid measuring cup, determine how many cups of water your machine's pan holds when filled to the rim.
VARIATION:
ROSEMARY BREAD:
Use half as much marjoram and thyme and replace the chives and the basil with fresh chopped rosemary.
