Recipe: IHOP Griddle Cakes - maybe??
Misc. This is an old recipe I found, not sure if it is what you are after.
1 1/2 c flour 1/2 c cooked cream of wheat 1/2 tsp salt
3 1/2 tsp baking powder 1 1/2 c milk 1 beaten egg
2 tbsp melted shortening 2 egg whites, stiffly beaten 1 tsp vanilla
mix and then sift all dry ingredients into a bowl. add the beaten egg to the milk. add that mixture to the dry ingredients VERY GRADUALLY and stir quickly. then add the melted shortening, egg whites, mix well. add vanilla.
cook on griddle. turn only once.
Another one I found is for corn meal griddle cakes. I think you could substitute cream of wheat for the corn meal - I am allergic to corn and often use cream of wheat in recipes. This is a 1938 recipe.
2 c boiling water 1 c corn meal (cream of wheat) 1 tbsp sugar
1 tsp salt 1 1/2 c milk 2 c sifted flour 3 tsp baking powder
2 eggs beaten.
pour boiling wter over corn meal, sugar and salt and mix well. let stand till meal swells. add milk and let stand until cool. sift flour and baking powder together and add. fold in beaten eggs. bake on hot griddle, turning to brown both sides. the cakes should be small and well cooked. they take longer to cook than wheat cakes. makes 36
hope those help.
