Misc.
IMPOSSIBLE B. L. T. PIE

12 slices bacon, crisply
cooked and crumbled
1 c. shredded Swiss cheese (4 oz.)
1 1/2 c. milk
4 eggs
1/8 tsp. salt
1/2 c. mayonnaise or salad dressing
coarsely shredded lettuce
thinly sliced tomatoes
1/8 tsp. pepper
1 c. Bisquick baking mix

Grease pie plate, 10 x 1 1/2-inch. Layer bacon and
cheese in plate. Beat remaining ingredients except lettuce and
tomatoes until smooth for 15 seconds in blender on high or 1
minute with hand beater. Pour into plate. Heat oven to 400 degrees.
Bake until top is golden brown and knife inserted in center
comes out clean, 30 to 35 minutes. Cool 5 minutes. Garnish
with lettuce and tomatoes and, if desired, crisply cooked and
crumbled bacon and mayonnaise or salad dressing. Makes 6
servings.
