GREEK SPICED CAKE
FOR THE CAKE:
1 (2-layer size) pkg. pudding-included yellow cake mix
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. ground cloves
1 cup water
1/3 cup oil
2 tbsp. brandy (or 2 tbsp. water and 1 tsp. brandy extract)
1 tbsp. grated orange peel
2 tsp. grated lemon peel
3 eggs
1/2 cup chopped almonds
FOR THE TOPPING:
1/2 cup powdered sugar, sifted
2 tbsp. brandy (or 2 tbsp. water and 1 tsp. brandy extract)
1/3 cup sliced or silvered almonds
TO MAKE THE CAKE:
Grease and flour two 8 or 9-inch round cake pans.
In large bowl, blend dry cake mix, cinnamon, nutmeg, cloves, water, oil, brandy, orange and lemon peel and eggs a low speed until moistened. Beat 2 minutes. at highest speed. Fold n almonds. Pour into prepared pans.
Bake at 325 degrees F for 35 to 45 minutes or until toothpick inserted center comes out. Set pans on wire rack to cool 10 minutes
Remove cake from pans. Turn each cake upright and place each on a serving plate.
TO MAKE THE TOPPING:
In small bowl, blend powdered sugar and 2 tablespoons brandy; spoon over tops of cakes. Sprinkle with 1/3 cup almonds Cool completely.
Makes 12 servings
