Recipe: Thin Crust Pizza Dough (makes 2 pizzas)

1 1/2 to 2 cups flour, divided use
1 teaspoon salt
1/2 teaspoon sugar
1 pkg. active dry yeast
3/4 cup water
1 tablespoon vegetable oil
Sauce and toppings of your choice
In large bowl, combine 3/4 cup flour, the salt, sugar and yeast; blend well.
In small saucepan, 3/4 cup heat water and oil until very warm (120-130 degrees F). Add to flour mixture. Blend at low speed until moistened. Beat 2 minutes at medium speed.
Stir in 1/2 to 3/4 cup flour to form a stiff dough.
On floured surface, knead in 1/4 to 1/2 cup flour until dough is smooth and elastic, about 3-5 minutes. Place dough in greased bowl and cover loosely with plastic wrap, then cloth towel. Let rise in a warm place (80-85) until light and doubled in size, about 30-40 minutes.
TO SHAPE AND BAKE:
Punch dough down several times to remove all air bubbles. Divide dough in half. Press each half into greased 12-inch pizza pan. Top with pizza toppings.
Bake at 400 degrees F for 18-25 minutes or until crust is golden brown.
