Recipe: Honey-Barbecue Spareribs and Chicken (serves 96)

HONEY-BARBECUE SPARERIBS AND CHICKEN
Yield: 96 servings
Serving Size: 2.5 oz cooked lean meat

1 1/4 gallons barbecue sauce
1 1/2 quarts honey
3 cups vegetable oil
3 cups lemon juice
20 lb pork spareribs, cut in sections
20 lb chicken quarters

Combine barbecue sauce and honey; set aside.

Mix oil and lemon juice; dip pork ribs and chicken quarters into mixture. Shake off excess and place meats on preheated grill until grill marks form.

Baste with oil mixture, turn and allow grill marks to form on second side.

Place pork and chicken in separate baking pans; generously coat with one-half of honey barbecue sauce.

Bake at 375 degrees F for 30 minutes; turn and coat again with remaining sauce. Reduce heat to 300 F and continue baking until pork and chicken test done.
