Recipe: Irish Soda Bread/Boxty on the Griddle

Breads - Assorted
Basic Recipe for Soda Bread

2 cups unsifted all-purpose flour
1-1/2 teaspoons baking powder
3/4 teaspoon salt
1/4 teaspoon baking soda
1 cup buttermilk

Mix dry ingredients. Add buttermilk and stir to make a soft dough.
Turn out on a lightly floured board and knead for about 1 minute.
Shape the dough into a round loaf about 8 inches in diameter. Put in a
grease round pan or on a greased cookie sheet. With a sharp knife, cut
a crosson the top. Bake in a preheated moderate over(350 degrees) for
40 minutes or until done. Bread is done if it sounds hollow when tapped
with your knuckles. Cool on its side before cutting, For a soft crust
wrap loaf in a tea towel and stand on its side to cool.

Boxty-on-the-griddle

1 cup each of grated raw potatoes, all purpose flour, and mashed potatoes
2 teaspoons each of baking powder and salt
2 eggs
Milk to mix(about 1/4 cup)

Squeeze the grated raw potatoes in a cloth to remove as much moisture as
possible. Sift the flour with baking powder and salt. Mix all potatoes and
dry ingredients well together with beaten eggs; add sufficient milk to
make a dropping batter. Drop by tablespoonfuls onto a hot buttered frying pan
and cook over moderate heat allowing 4 minutes on each side. Serve hot and well buttered with or without sugar. Makes 4-6 servings

They say the children sang this song when boxty bread was being prepared
Three pans of boxty, baking all the day. What use is boxty without a
cup of tay.
I guess long ago "tay" was hard to get so they got a nice tin porringer
of milk and sat at the table and ate hot butterd boxty to the fill.

Hope this helps
