Recipe: Crockpot Diabetic Sweet-Sour Cabbage

CROCKPOT DIABETIC SWEET-SOUR CABBAGE

1 medium-sized head red, or green, cabbage
2 medium onions, chopped
4 medium tart apples, pared, quartered
1/2 cup raisins
1/4 cup lemon juice
1/4 cup cider, or apple juice
1 tablespoon honey
1 tablespoon caraway seeds
1/8 teaspoon allspice
1/2 teaspoon salt

Combine all ingredients in crockpot.

Cover crock pot and cook on HIGH 3-5 hours, depending upon how crunchy or soft you want the cabbage and onions.
