Recipe: Jackie's Spinach Quiche (with biscuit crust)
Breakfast and BrunchJACKIE'S SPINACH QUICHE
1 cup chopped onion
1 clove chopped garlic
4 tsp. margarine
4 eggs
2 oz. shredded Cheddar
4 tsp. bacon bits
1 cup low fat evaporated milk
salt and pepper (to taste)
2 (10 oz.) pkg. frozen spinach, defrosted and well drained
1 (4 oz.) pkg. ready to bake biscuits
Preheat oven to 375 degrees. Spray 9-inch inch pie pan with cooking spray.
Saute onion and garlic in margarine until translucent. Set aside.
In blender or processor, combine eggs, cheeses, bacon bits. Add onion mixture, along with milk, salt and pepper until well blended. Add spinach and blend again.
Roll biscuit dough between 2 layers of wax paper. Place in pie pan forming it with the sides. Pour quiche batter into crust.
Bake at 375 degrees for 40 to 45 minutes.
