Recipe(tried): Bacon and Prosciutto Rollups with Balsamic Vinegar Syrup

the variation on bacon date things I use:

Pkg. Medjool dates (remove pits)
blue cheese (mixture of blue and cream cheese also works)
sliced prosciutto
balsamic vinegar syrup (recipe follows, optional)

Preheat oven to 400 degrees F.

Mix blue cheese and softened cream cheese until blended or use softer Cambazola or Gorgonzola.

Place spoonful of cheese inside date.

Wrap half slice of prosciutto around each date and hold with toothpick.

Bake 10-12 minutes.

Serve warm or at room temperature with balsamic syrup, if desired.

TO MAKE BALSAMIC VINEGAR SYRUP:
Place 1 cup Balsamic vinegar into small saucepan with 1 to 2 tablespoons honey. Bring to boil, turn down heat and simmer until reduced in volume by at least half and vinegar is thick.
