1 CUP SHORTENING (LIKE CRISCO)
1 CUP SUGAR
3 EGGS
1 CUP JAM OR JELLY (YOUR CHOICE)
2/3 CUP BUTTERMILK
2 CUPS FLOUR (1/3 C. MORE IF USING JELLY
1 t. SODA
1 t. BAKING POWDER
1/2 t. NUTMEG
1/2 t. CINNAMON
1/2 t. CLOVES
1/2 t. ALLSPICE
1/4 t. SALT
MIX AS FOR A BUTTER CAKE, ADDING EGGS ONE AT A TIME TO CREAMED
SHORTENING & SUGAR MIXTURE. ADD FOUR & MILK ALTERNATELY, BEAT AFTER EACH ADDITION. ADD ALL OTHER DRY INGREDIENTS, MIX WELL. THEN STIR IN JAM OR JELLY
WELL.
GREASE & FLOUR A LOAF PAN (A LARGE ONE)& BAKE FOR 1 HR. AT 350*(
NOTE: THIS IS A GOOD APPLESAUCE CAKE RECIPE TOO, USE 1 CUP APPLESAUCE
INSTEAD OF JELLY OR JAM (SAME AMOUNT OF FLOUR.)INCREASE SODA TO
1 1/2 t. MAY ALSO ADD NUTS IF DESIRD.
THIS RECIPE IS AT LEAST 70 YEARS OLD. MY GRANDMOTHER'S COOK MADE THIS
OFTEN, FOR IT WAS ONE OF MY FAVORITES & IS DELISH, ESPECIALLY WHEN WARM
WITH BUTTER OR WHIP CREAM. I AM OVER 65 & THIS CAKE WAS BEING MADE LONG BEFORE THEN. MY FAVORITE WAS BLACK BERRY JAM. ENJOY!!!!
