...This yr due to a time crunch, I decided to "cheat" and use frozen strawberries..they were much more cost effective than fresh! I purchased 6lb bags from my local bulk store and when ready, I found chopping them up while still frozen was less labor intensive--just put in a small amt in bowl at a time and used single knife to quarter them; then as with most jam recipes, add equal amt of sugar...to minimize foaming, I let fruit/sugar sit in frig overnite; during cooking I also added half tsp of margarine which eliminated need to skim foam; however due to water content (in frozen fruit), I found cooking time was extended, so I added half pouch of pectin...my 6lb patch yeilded 3 qts, 5pts, and 8- 8oz jelly jars of delicious strawberry jam!
