WHOLE STRAWBERRY JAM
The strawberries remain whole and are lovely to look at.
4 cups fresh ripe strawberries, the best you can find
5 cups sugar
1/2 cup fresh lemon juice
Clean berries and leave whole. Place in 6 quart pot; add sugar and let sit for 3 hours.
Bring to a boil and cook exactly 8 minutes.
Add lemon juice and boil no more than 2 minutes.
Cool, skim and stir very gently to keep the berries from all coming to the top.
Pack in sterilized jars and process 10 minutes in boiling water bath.
