Hi Julie,
My grandmother made these a lot I hope you enjoy this recipe. It's a favorite at my home.
Asparagus Cutlets

Wash bunch of asparagus and put in ziplock bag. Cook a few mins.in microwave.
Asparagus should still be firm and green.(This is how I like to cook them)
Dip asparagus in egg or egg subsitute. Roll in Italian flavored breadcrumbs and saute' in hot skillet with olive oil. Cook till golden.
You can serve with tomato sauce.
