Sauteed Sliced Potatoes With Asparagus

3/4 pound small red potatoes
2 cups fat-free, low-sodium chicken broth
1/2 pound fresh asparagus
2 teaspoons olive oil
salt and freshly ground black pepper

Wash potatoes. but do not peel. Thinly slice potatoes and place in a large saucepan. Add broth and cover the pan. Bring to a simmer and cook, covered, 10 min. Trim woody stems of asparagus about 1" from bottom; wash asparagus. Cut asparagus into 2" pieces; add to potatoes, cover and continue to simmer 5 min. Spoon potatoes and asparagus onto individual plates. Sprinkle with olive oil, salt, and pepper.

Crunchy Asparagus Medly

1 1/2 lb fresh asparagus -- cut in 2" pieces
1 cup thinly sliced celery
2 (8oz) cans sliced water chestnuts -- drained
1/4 cup slivered almonds -- toasted
2 tbl soy sauce
2 tbl butter or margarine

In a large saucepan, cook the asparagus and celery in a small amount of water for 5-6 min. or until crisp-tender; drain. Stir in water chestnuts, and remaining ingred.; heat through.

Chilled Asparagus with Garlic Dipping Sauce

1/2 cup mayonnaise
1/3 cup plain nonfat yogurt
3 cloves garlic -- pressed
1 tbl Dijon mustard
1 1/2 lbs fresh asparagus

Stir together the first 4 ingred. ina small bowl. Cover and chill 4 hrs. Snap ends of asparagus; remove scales from stalks, if desired. Arrange in a steamer basket over boiling water. Cover and steam 3 min. or until crisp-tender. Cover and chill. Serve with garlic sauce.

Asparagus Caesar

3 lbs fresh asparagus
1/4 cup + 2 tbl butter or margarine -- melted
1/4 cup + 2 tbl lemon juice
1/4 cup + 2 tbl grated Parmesan cheese
paprika
lemon slices -- optional

Cook asparagus in a small amout of water 6-8 min. or until crisp tender. Drain. Place asparagus in a 12x8x2" baking dish. Combine butter and lemon juice; pour over asparagus. Sprinkle cheese and paprika over asparagus. Place under broiler until browned. Garnish with lemon, if desired.
