Recipe: Asparagus

12 stalks of aspargus
4 tablespoons butter
1/2 teaspoon seasoned salt
2 tablespoons water
2 scallions, minced
1 large egg, beaten
2 tablespoons ham, finely chopped
Parmesan cheese (optional )

Wash and clean aspargus, cutting off the hard ends and soaking in salt water for 5 minutes. Cut into two---inch lenghts. Melt the butter, saute the aspargus and scallions over medium heat for approximately 3 minutes. Add the seasoned salt and two tablespoons water. Cover and cook for about 3 more minutes or until tender---crisp. Drain off excess water, leaving about 1 tablespoon in pan. Add chopped ham to egg and pour mixture over asparagus. Cook over medium heat until egg is set. Serve immediately with a sprinkle of Parmesan cheese.
