Recipe(tried): Julie's Lemon Mousse

LEMON MOUSSE
**************
3 eggs seperated
3 tbls Sugar
1 pkt plain gelatine
1/3 cup hot water
1/2 cup fresh lemon juice
1 Tbls grated lemon rind
Another 2 tbls sugar(will make sense in the rec.)

Beat egg yolks and sugar in the top of a double boiler until they become light in colour and fluffy (2 mins approx)
Dissolve gelatine in hot water, add lemon juice and add to egg mixture.Beat for another 1 min.Remove from heat and place in fridge for about 10 mins. Beat egg whites* and the 2 tbls of sugar until peaks are formed.Take mixture from fridge and fold in egg whites and lemon rind.Chill for about 4 hrs. prior to serving

*substitute pasteurized egg whites or reconstituted dried egg whites for raw egg whites
