Recipe: Strawberry Omelet (A&P Strawberry Preserves ad, 1950's)

Breakfast and Brunch
STRAWBERRY OMELET

4 eggs
2 Tbsp orange juice
1/4 tsp grated orange zest
1/4 tsp salt
1 Tbsp flour
1 tsp granulated sugar
1 Tbsp butter
1/2 cup strawberry preserves
1 Tbsp sour cream for garnish

Preheat oven to 325 degrees F.

Separate eggs, beat whites until stiff; set aside.

Beat yolks, blend in orange juice, orange zest, salt, flour and sugar. Fold yolk mixture into beaten whites until it's a uniform color

Melt 1 Tbsp butter in a 10 inch skillet. Pour in omelet mixture. Cook on stovetop slowly until bottom is browned.

Place in oven until top is set, about 10 minutes.

Spoon strawberry preserves over 1/2 of omelet, fold in half. Garnish top with sour cream.

Serves 2
