Recipe: Key Lime Pie (using Jello) (5)

Hello Rose,

There are quite a few versions of this recipe - I hope one of these is the one your mom has been searching for. Please note that some of the older recipes call for raw eggs so you might want to substitute pastuerized egg product and/or egg white powder in those.

1. Jello Pie

1 graham cracker crust
1 can evaporated milk
14 1/2 oz. can chill
1 pkg. lime Jello
1/2 c. hot water
1/4 c. lemon juice
1/4 c. sugar

Whip evaporated milk until stiff. Mix other ingredients all together. Add to whipped milk. Pour into graham cracker crust. Chill in refrigerator for 4 hours.

2. Key Lime Pie

1 (3 oz.) pkg. Jello lime gelatin
1 c. boiling water
1-2 tsp. grated lime rind
1/2 c. lime juice
1 egg yolk, beaten
1 1/3 c. (14 oz.) sweetened condensed milk
1 tsp. aromatic bitters
1 egg white
Few drops green food coloring
1 baked 9-inch pie shell, cooled

Dissolve gelatin in boiling water. Add lime rind and juice. Pour slowly into beaten egg yolk, stirring constantly. Add condensed milk and bitters. Chill until slightly thickened. Beat egg white until stiff peaks will form. Fold into Jello mixture. Add food coloring. Pour into 9-inch pie shell. Chill until firm, about 3 hours. Garnish with lime slices or prepared whipped topping, if desired.

3. Dot's Key Lime Pie

1 1/3 c. sugar
2 c. flour
2/3 tsp. salt
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. lemon extract
3 oz. lime Jello
5 eggs
1 1/3 c. oil
3/4 c. orange juice
1/2 tsp. vanilla

JUICE:
1/3 c. lime juice (Key lime or regular lime)

1/3 c. powdered sugar Mix juice and sugar together. Place dry ingredients in bowl. Add rest of ingredients. Beat until well blended. Pour into greased 9 x 13 pan. Bake 25 to 30 minutes at 350 degrees. Remove cake from oven. Let stand 15 minutes. Prick cake all over with fork and pour this juice all over it. Cut into squares and garnish with whipped cream and lime slices. Serve with Cool Whip or cream.

4. Key Lime Pie

9" deep dish pie crust, baked
3 oz. lime Jello
1/2 c. lime juice
1 tsp. grated lime peel
1 (15 oz.) can Borden's sweetened condensed milk
1 egg yolk
1 egg white

Dissolve Jello as directed with 1 cup boiling water only. Add 1/2 cup lime juice and 1/2 teaspoon of grated lime peel. Add condensed milk and beaten egg yolk. Add little food coloring if desired. Put in refrigerator and chill until slightly thickened. While Jello mixture is chilling, whip 1 egg white until it forms peaks. Fold egg white into Jello mixture and pour into cooled baked pie shell. Chill another 2 to 3 hours and top with Cool Whip.

5. Key Lime Pie

1 baked pastry shell
1 tbsp. unflavored Jello
1 c. sugar
1/4 tsp. salt
4 eggs, separated
1/2 c. lime juice
1/4 c. water
1 tsp. lime peel, grated
Green food coloring
1 c. whipping cream

Beat egg yolks, lime juice and water together and stir into the gelatin mixture. Cook over medium heat, stirring constantly until the mixture just comes to a boil. Remove from heat, stir in grated peel and add enough coloring for pale green color. Chill stirring occasionally, until thickened. Beat egg whites until soft peaks form. Fold the gelatin mixture into the egg whites, fold in whipped cream. Spoon into pastry shell. Chill until firm. Spread with additional whipped cream.
