Recipe: Kroger Sweet Citrus Chicken Hoagies with Sesame Dressing
SandwichesKROGER SWEET CITRUS CHICKEN HOAGIES
FOR THE MARINATED CHICKEN:
8 skinless boneless chicken thighs (5.33 oz each) cut into strips
1 tablespoon olive oil
1 garlic clove, minced
1/2 teaspoon lemon pepper
1 tablespoon fresh lime juice
1 tablespoon sweet white wine
FOR THE SESAME DRESSING:
1 cup vegetable oil
1/2 cup sugar
2/3 cup wine vinegar
1 tablespoon sesame seeds
1 tablespoon chopped onion
1 tablespoon orange juice concentrate, thawed
1 teaspoon sweet mustard
FOR COOKING:
1 tablespoon vegetable oil
12 fresh snow peas, ends snipped
FOR SERVING:
4 large crusty hoagie rolls
1 tablespoon sweet mustard
8 red lettuce leaves
1 small sweet onion, thinly sliced into rings
4 teaspoons sesame seeds
12 mandarin orange slices
4 fresh mint sprigs
TO MARINATE THE CHICKEN:
In medium bowl, mix together olive oil, garlic, lemon pepper lime juice wine. add chicken cover refrigerate and marinate 20 minutes.
TO PREPARE THE SESAME DRESSING:
In blender container, place oil, sugar, wine vinegar, 1 tablespoon each sesame seeds, chopped onion, and thawed orange juice concentrate. Add the sweet mustard. Blend 10 seconds on high. Refrigerate; shake before serving.
TO COOK THE CHICKEN AND SNOW PEAS:
Remove chicken from marinade; drain.
In medium nonstick fry pan place oil and heat to medium high temperature. Add chicken and saute about 5 minutes or until fork tender.
Add peas and saute 1 minute. Drain from fry pan to a mixing bowl. Add 1/2 cup prepared sesame dressing, stirring to coat chicken.
TO MAKE THE SANDWICHES:
Cut a thin slice off top of each roll; remove center of roll leaving 1/2 inch crust. Cover and set aside. (Use removed bread for crumbs or croutons in another meal.) Spread mustard equally on inside of each roll. Line each roll with 2 leaves and top with onion rings. Spoon equal amounts of chicken mixture in each roll. Place each hoagie on a serving plate with cut off top on the side. Sprinkle sandwich with seeds. Garnish with 3 orange slices and sprig of mint on one side of each hoagie. Serve remaining dressing in separate bowl.
