Recipe: Kuba (Czech Barley Casserole)
Misc.I have not had the chance to try this dish yet, but is this anything like you're looking for. What you described sounded a lot like this which is something I grew up served by my family for Thanksgiving. I've seen celery and turkey giblets added to it as well. Hope this helps.
KUBA (CZECH BARLEY CASSEROLE)
"This is a recipe for a Czech barley casserole that is traditionally served on Christmas Eve but is also good as a side dish."
3/4 cup finely chopped onion
1/4 cup butter
7 cups water
1 1/2 cups barley (or rice)
1 1/2 cups dried mushrooms
2 cloves garlic, finely minced
2 tsp salt
1 tsp marjoram
1/4 tsp ground black pepper
Cook the onion in the butter until translucent.
Wash the mushrooms until free from grit. Add with the remaining ingredients to the onions and cook, uncovered, until the water has evaporated, stirring frequently. (Mixture will be very thick.) Add the remaining ingredients. Place in a greased casserole or baking dish.
Bake at 350 degrees F for 30 to 35 minutes.
I usually cut this recipe in half unless we are having a really big crowd. It also freezes well.
Makes 8 servings
