Hi, Michelle! I have been VERY lactose-intolerant for quite some time, now. Here are a couple of things for you:
It's not exactly a recipe, BUT... Hershey's chocolate cocoa mix called "Hershey's Goodnight Kisses" in a black box are delicious and, IF made with hot water instead of milk, do not affect me at all (other brands do).
While I find soy milk to be disgusting and a rotten substitute in many recipes, the Lactaid and Dairy Ease milks are good and do not affect me either, as long as they ARE COOKED thoroughly (yes, I'm THAT bad that even Lactaid products can bother me!)
Every family holiday meal, I offer to make the mashed potatoes, just because it's the only way I will be able to have any. I use real potatoes, butter, and a little Lactiad Milk. No one notices a difference, and no one seems to mind eating my cooking!
My mother has the same lactose problem. She says she can take lots of yogurt without a problem, but I have yet to try it myself. You might want to give it a try.
Milk is a hidden ingredient in many prepared and frozen foods. Long before McDonald's fessed up to using milk products in their French Fry preparation, I had a problem with them -- AND with lots of other fast food chains' french fries (who have yet to fess up!). So, if you have a problem with a particular prepared or frozen food, don't take the promise of "Lactose-Free" as reality. The Breyer's brand Lactose-Free Ice Cream may be fine for those who are less lactose-intolerant than I am, but even a small amount of it definitely hits me hard. Many of these ideas depend on how bad your intolerance is.
I have a large Word-formatted recipe file that I put together for my Girl Scout Troop. It contains many milk-free recipes, so feel free to reply to me and we'll find a way to email it to you.
