Recipe: Lady Ashburnam Pickles for Fergy

Hi Fergy, a net search turned up a couple of recipes. Please report back, the recipe sounds very interesting.

LADY ASHBURNHAM PICKLES

6 large cucumbers (cut small)
1/4 cup salt
4 cups onions, chopped fine
2 cups vinegar
2 cups sugar
3 Tbsps. flour
1 Tbsp. mustard
1 Tbsp. tumeric
1 Tbsp. mustard seed
1 Tbsp. celery seed

Add salt to cucumbers in large pot and let stand overnight.
Drain and add other ingredients, mixing all together. Cook for 30 minutes. Bottle and refrigerate.

6 Ige. cucumbers
3 tbsp. flour
1/4 c. salt (coarse)
1 tbsp. mustard
I gt. onions
1 tbsp. turmeric
1 pt. vinegar
1 tsp. mustard seed
2 c. sugar
1 tsp. celery seed

Peel cucumbers and remove seeds. Cut up in small pieces (medium diced size). Stand in 1/4 cup salt overnight and drain in the morning. In large boiler, add cut up onions, vinegar, sugar, flour, mustard, turmeric, mustard and celery seed. Add cucumber and cook slowly on low heat for 1/2 to 3/4 hour. Bottle and refrigerate.

Note: When making up sauce, add flour to sugar and stir well. Add vinegar, etc.
