Recipe: Latin Rub

LATIN RUB

TO MAKE 1 CUP:
4 tbsp ground cumin
4 tbsp chili powder
2 tbsp ground coriander
1 tbsp ground cinnamon
1 tbsp turbinado sugar (or brown sugar)
2 tbsp salt
1 tbsp red pepper flakes
2 tbsp ground black pepper

TO MAKE 1/3 CUP:
4 tsp ground cumin
4 tsp chili powder
2 tsp ground coriander
1 tsp ground cinnamon
1 tsp turbinado sugar (or brown sugar)
2 tsp salt
1 tsp red pepper flakes
2 tsp ground black pepper

In a jar with a tight-fitting lid, combine the ingredients. Shake together well to blend. Store at room temperature.

Use for seasoning pork chops, ribs or roasts before grilling.

Makes 17 units (yields 1 generous cup when using tablespoon as unit; yields generous 1/3-cup when using teaspoon as unit)
